  • 3 cups milk
  • 8 oz Velveeta cheese
  • 4 oz Monterey Jack cheese
  • Assorted bell peppers (red, green, yellow)
  • Chicken broth
  • Olive oil and spices (chili powder, cumin, garlic powder)

  1. In a bowl, season the chicken cubes with olive oil and spices.
  2. Cook the seasoned chicken in a skillet until browned and cooked through.
  3. In the same skillet, sauté onions and garlic before adding rinsed rice, broth, tomato sauce, and spices; bring to a boil.
  4. Reduce heat and simmer until the rice is tender and liquid is absorbed.
  5. Meanwhile, prepare the cheese sauce by melting butter and whisking in flour; gradually add milk until smooth. Stir in cheeses until melted.
  6. Sauté bell peppers until tender-crisp.
  7. Layer cooked rice in a serving dish topped with chicken, sautéed veggies, and cheese sauce.
