  • 3 chicken breasts, sliced into thin cutlets
  • Salt and black pepper
  • Olive oil
  • Unsalted butter
  • Garlic
  • Chicken broth
  • Heavy cream (or coconut cream)
  • Parmesan cheese
  • Sun-dried tomatoes
  • Fresh basil

  1. Pat chicken dry, season with salt and pepper, then dredge in flour.
  2. Heat olive oil in a skillet over medium-high heat, sear chicken for 4-6 minutes on each side until golden brown; set aside.
  3. In the same skillet, reduce heat to medium; add butter and garlic. Sauté for one minute before adding sun-dried tomatoes.
  4. Pour in chicken broth, scraping browned bits from the pan; simmer for a few minutes.
  5. Stir in cream (or coconut cream) and let it thicken for 2-3 minutes. Add grated Parmesan cheese and herbs.
  6. Return chicken to the skillet; simmer on low for 5-7 minutes until heated through.
  7. Garnish with fresh basil before serving.
