  • 1 pound dried large white beans (Great Northern or Cannellini)
  • 8 cups vegetable broth
  • 4 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, finely diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • ½ cup sun-dried tomatoes, drained and chopped
  • ¼ cup grape juice (optional)
  • ¼ cup coconut cream (or heavy cream)
  • 2 tablespoons chopped fresh basil
  • Salt and pepper to taste

  1. Rinse and soak beans overnight in water, or quick-soak by boiling for 2 minutes then letting sit covered for an hour.
  2. Drain beans and place them in a pot with vegetable broth. Bring to a boil then simmer covered for about 1 to 1.5 hours until tender.
  3. In a skillet, heat olive oil over medium heat. Sauté onion for 5-7 minutes until softened. Add garlic and bell pepper; cook until fragrant.
  4. Mix in diced tomatoes and sun-dried tomatoes; let simmer for about 15-20 minutes.
  5. If using grape juice, add it now to deglaze the pan, scraping up any browned bits.
  6. Combine cooked beans into the skillet with sauce; adjust thickness with more broth if needed.
  7. Stir in coconut cream (or heavy cream) and season with basil, salt, and pepper. Simmer for an additional 5-10 minutes before serving.
