  • 4 boneless, skinless chicken breasts (6 ounces each)
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 large eggs, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice
  • Fresh parsley for garnish

  1. Pound chicken breasts to even thickness (about 1/2 inch).
  2. Set up three shallow dishes: one with flour, salt, pepper, and garlic powder; one with beaten eggs; and one with Parmesan cheese and breadcrumbs.
  3. Dredge each chicken breast in flour, then egg, and finally the cheese-breadcrumb mixture.
  4. Heat olive oil and butter in a skillet over medium heat. Cook chicken for 5-7 minutes on each side until golden brown and cooked through.
  5. In the same skillet, simmer chicken broth and lemon juice for about 2-3 minutes until slightly thickened.
  6. Serve chicken topped with lemon sauce and garnish with parsley.
