  • 2 pounds ground chicken (or turkey)
  • 1 cup shredded Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves minced garlic
  • 1/2 cup whole milk (or plant milk)
  • Salt, pepper, and herbs (garlic powder, onion powder, dried basil, dried parsley)

  2. Preheat your oven to 375°F (190°C) and lightly grease a 9×5 inch loaf pan.
  3. In a large bowl, mix panko breadcrumbs, Parmesan cheese, garlic, garlic powder, onion powder, basil, parsley, salt, and pepper. Add beaten eggs and milk; stir until combined. Gently fold in the ground chicken.
  4. Transfer the mixture to the prepared loaf pan and shape into a dome. Bake for 35–40 minutes.
  5. Brush melted butter over the top of the meatloaf and return to the oven for an additional 20–25 minutes until cooked through at an internal temperature of 165°F (74°C).
  6. Let rest for 10–15 minutes before slicing. Garnish with extra Parmesan and fresh parsley.
