  • 10 (8-inch) flour tortillas
  • 2 cups shredded Colby Jack cheese
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 small yellow onion
  • 1 bell pepper
  • 1 (15-ounce) can black beans
  • 1 cup frozen corn kernels
  • Olive or vegetable oil
  • Garlic, chili powder, ground cumin, smoked paprika (optional), salt, and pepper

  1. Cut chicken into small cubes and season with salt and pepper. Heat oil in a skillet over medium-high heat; cook chicken until browned (5-7 minutes). Remove from skillet.
  2. Sauté diced onion and bell pepper in the same skillet until softened (5-7 minutes). Add minced garlic and cook for an additional minute.
  3. Stir in spices and return chicken to the skillet with black beans and corn; mix well and cook for another 3-5 minutes.
  4. Cut faces into five tortillas using a knife or cookie cutter.
  5. Assemble the quesadillas: place an uncut tortilla in a heated skillet, layer cheese, filling, then top with a cut tortilla.
  6. Cook until golden brown on both sides (3-5 minutes each side). Slice into wedges before serving.
