  • 1 pound Italian dry turkey slices
  • 1/2 pound provolone cheese
  • 1 red bell pepper
  • 1/2 red onion
  • 1/4 cup pitted Kalamata olives
  • 1/4 cup pepperoncini peppers
  • 1/4 cup marinated artichoke hearts
  • For the vinaigrette: apple vinegar, extra virgin olive oil, dried oregano, garlic powder, red pepper flakes (optional)

  1. Rinse and chop the romaine lettuce; place it in a large bowl.
  2. Thinly slice the red bell pepper and soak sliced onion in cold water for 10 minutes before adding to the bowl.
  3. Halve Kalamata olives and slice pepperoncini; add these along with quartered artichoke hearts to the salad.
  4. Fold in turkey slices and provolone cheese; add capicola if desired.
  5. In a small bowl, whisk together apple vinegar, olive oil, oregano, garlic powder, red pepper flakes, salt, and pepper.
  6. Pour the vinaigrette over the salad mixture; toss gently to combine.
  7. Serve immediately or chill for 30 minutes to enhance flavors.
