  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 2 carrots
  • 2 celery stalks
  • 4 cloves garlic
  • 8 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup small pasta (such as ditalini)
  • ½ cup fresh spinach
  • Salt and pepper to taste

  1. In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery; sauté until softened (5-7 minutes).
  2. Stir in minced garlic and cook for another minute.
  3. Add ground chicken and cook until browned; drain excess grease.
  4. Pour in chicken broth and diced tomatoes, then season with oregano, basil, and red pepper flakes (if using). Stir well.
  5. Bring to a simmer, cover, and let cook for at least 15 minutes.
  6. Stir in pasta and cook according to package instructions until tender.
  7. Add fresh spinach; stir until wilted.
  8. Mix in grated Parmesan cheese until melted; season with salt and pepper to taste.
  9. Serve hot with additional Parmesan on top.
