  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 cup small pasta (such as ditalini or orzo)
  • 1/2 cup chopped fresh spinach
  • Salt and pepper to taste

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5-7 minutes until softened.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add ground chicken, breaking it up as it cooks until browned through.
  4. Pour in chicken broth and add diced tomatoes along with oregano and basil. Stir well.
  5. Bring to a gentle simmer for at least 15 minutes to meld flavors.
  6. Stir in pasta; cook according to package directions until tender.
  7. Fold in spinach until wilted, then stir in grated Parmesan cheese if desired.
  8. Season with salt and pepper before serving.
