  • 1 pound cherry tomatoes
  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 pound pasta (spaghetti or choice)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese (or alternative)

  1. Preheat your oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, pepper, and optional red pepper flakes on a baking sheet. Wrap garlic head in foil and add it to the sheet. Roast for 30-40 minutes until tomatoes burst and garlic is tender.
  2. Meanwhile, boil salted water in a large pot. Cook pasta according to package directions until al dente, reserving 1/4 cup of pasta water before draining.
  3. In a large skillet, squeeze roasted garlic into the pan and mash into a paste. Add roasted tomatoes and their juices; gently mash half of them for sauce consistency. Stir in reserved pasta water to reach desired thickness.
  4. Toss drained pasta into the sauce until coated. Mix in fresh basil and grated cheese before serving hot.
