  • 810 cups mixed greens
  • 46 oz feta cheese
  • 1/4 cup apple cider vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 cup pecans or walnuts
  • 1/3 cup dried cranberries

  1. Wash and dry mixed greens thoroughly; place in a large bowl.
  2. Core and slice Honeycrisp apples; toss with lemon juice or apple cider vinegar to prevent browning.
  3. Crumble feta cheese into small pieces and thinly slice red onion.
  4. Toast pecans or walnuts in a skillet until fragrant; chop roughly.
  5. In a separate bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
  6. Combine greens with apples, feta, onion, nuts, and dried cranberries; drizzle with dressing and toss gently.
