  • 23 large Honeycrisp apples, cored & thinly sliced
  • 810 cups mixed greens (spring mix or baby spinach)
  • 46 oz crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/2 cup toasted pecans or walnuts
  • 1/3 cup dried cranberries or cherries
  • Preparation Instructions:

Instructions

  1. Wash and dry mixed greens; place them in a large bowl.
  2. Core and slice the Honeycrisp apples, adding lemon juice to prevent browning.
  3. Crumble feta cheese and slice red onion; soak onion in ice water to mellow flavor if desired.
  4. Lightly toast nuts in a skillet until fragrant; let cool before chopping.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper for the vinaigrette.
  6. Combine all salad ingredients in the bowl with greens and drizzle half of the vinaigrette over top; toss gently.
