  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Slice the sweet potatoes into uniform rounds and toss them with olive oil, sea salt, and black pepper in a large bowl.
  3. Arrange the slices in a single layer on the baking sheets and roast for about 20-25 minutes, flipping halfway through until golden brown and tender.
  4. While the sweet potatoes roast, whisk together honey, lime juice, extra virgin olive oil, and red pepper flakes in a small bowl for the glaze.
  5. Once roasted, let the sweet potato rounds cool slightly before drizzling with the honey-lime glaze. Top with crumbled feta cheese and fresh herbs if desired.
