  • 1 tbsp fresh lime juice

  1. Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Wash, peel, and slice sweet potatoes into rounds about 1/4 to 1/3 inch thick.
  3. In a bowl, toss sweet potato slices with olive oil, salt, and pepper until coated. Arrange on baking sheets in a single layer.
  4. Bake for 20-25 minutes, flipping halfway through until golden. Allow cooling for 5-10 minutes.
  5. For the glaze, whisk together honey, lime juice, olive oil, and optional red pepper flakes in a bowl until emulsified.
  6. Arrange sweet potato rounds on a platter, drizzle with glaze, top with feta cheese, and garnish with herbs if desired.
