  • 2 tablespoons chipotle peppers in adobo sauce
  • 2 cups long-grain rice
  • 1 (15-ounce) can black beans
  • 2 cups frozen corn
  • 2 ripe avocados
  • Olive oil, garlic, cumin, lime juice, salt, and pepper

  1. In a bowl, mix honey, chipotle peppers, adobo sauce, garlic, smoked paprika, cumin, cayenne pepper (if desired), salt, and pepper.
  2. Marinate cubed chicken in the mixture for at least 30 minutes.
  3. Cook marinated chicken in a skillet over medium-high heat until fully cooked (about 5-7 minutes per side).
  4. Prepare rice by combining it with water or broth in a saucepan; bring to boil then simmer until tender.
  5. Sauté onions and garlic in olive oil; add black beans with broth/water, cumin, chili powder; simmer for about 10-15 minutes.
  6. In a bowl, mix thawed corn with diced bell peppers and onions; add lime juice and seasonings.
  7. Blend avocados with sour cream/yogurt and lime juice until creamy.
  8. Assemble bowls starting with rice followed by chicken, black beans, corn salsa, and drizzle with avocado crema.
