  • 1/2 medium white onion, roughly chopped
  • 23 cloves garlic, minced
  • 12 jalapeños, seeded and roughly chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sugar
  • Salt to taste
  • Pinch of cayenne pepper (optional)

  1. Prepare the tomatoes by squeezing each whole peeled tomato in your hands to break them up before adding them to the blender.
  2. Combine the squeezed tomatoes and canned diced tomatoes along with their juices in a blender or food processor.
  3. Add the chopped onion, minced garlic, jalapeños, cilantro, lime juice, cumin, sugar, salt, and optional cayenne pepper.
  4. Pulse until you reach your desired consistency—about 5-6 bursts should do it.
  5. Taste and adjust seasoning if necessary.
  6. Chill in the fridge for at least 30 minutes before serving for optimal flavor.
