Cook the high-protein pasta according to package directions until al dente. Reserve ½ cup of pasta water before draining.
In a large skillet, heat olive oil over medium heat. Sauté the diced onion for 3-5 minutes until translucent. Add minced garlic and cook for another minute.
Stir in paprika powder, salt, pepper, and baby spinach (if using). Cook until spinach wilts.
Reduce heat and add cottage cheese to the skillet. Stir until creamy, adjusting consistency with reserved pasta water as needed.
Combine drained pasta with the sauce in the skillet and toss well to coat. Serve immediately.
