  • 1 lb Italian beef sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Dried basil, dried oregano, salt, and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Cook the Italian beef sausage until browned, about 6-8 minutes. Drain excess grease.
  2. Reduce heat to medium; add diced onion and sauté for 5-7 minutes until softened. Stir in garlic and cook for an additional minute.
  3. Add drained tomatoes; cook for another 3-5 minutes.
  4. Pour in chicken stock and return the cooked sausage to the pot. Stir in dried herbs, salt, and pepper.
  5. Bring to a gentle boil; reduce heat to low and simmer for 20-30 minutes.
  6. Add ditalini pasta and cook for about 7-9 minutes until al dente.
  7. Stir in heavy cream and Parmesan cheese until melted; adjust seasoning if necessary.
