  1. Marinate chicken with soy sauce, brown sugar, rice vinegar, sesame oil, ginger, garlic powder, and optional red pepper flakes for at least 30 minutes.
  2. Preheat oven to 400°F (200°C). Prepare vegetables by chopping bell peppers, onion, and broccoli; drain pineapple.
  3. Toss vegetables and pineapple in a bowl; spread on a lined baking sheet.
  4. Place marinated chicken over veggies; bake for 25-30 minutes until cooked through (165°F or 74°C).
  5. While baking, whisk reserved pineapple juice with cornstarch, soy sauce, honey, and rice vinegar in a saucepan until thickened.
  6. Drizzle sauce over baked chicken and veggies; serve hot over cooked white rice.
