  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 cup diced fresh pineapple
  • 2 cups long-grain white rice
  • 1 avocado (sliced)
  • Optional toppings: shredded carrots, green onions, sesame seeds

  1. In a bowl, mix soy sauce, brown sugar, rice vinegar, garlic, ginger, and red pepper flakes. Whisk cornstarch with water until smooth.
  2. Marinate the chicken in the sauce for at least 30 minutes.
  3. Cook rice by rinsing it under cold water and simmering it with water and salt for 18-20 minutes.
  4. Prepare pineapple salsa by mixing diced pineapple, red bell pepper, onion, cilantro, jalapeño (if using), lime juice, and salt.
  5. Cook marinated chicken in a skillet until golden brown or bake at 400°F for 20-25 minutes.
  6. Assemble bowls with rice as the base topped with chicken and salsa. Add avocado slices and optional toppings.
