  • 1 pound short pasta (such as rotini or farfalle)
  • 1 can black beans (15 oz), rinsed and drained
  • 1 can corn (15 oz), drained
  • 1 red bell pepper, diced
  • 1 orange bell pepper, diced
  • ½ cup chopped red onion
  • 1 cup shredded cheddar cheese
  • ½ avocado, diced
  • Dressing: mayonnaise, lime juice, olive oil, chili powder, cumin, garlic powder

  1. In a medium bowl, whisk together mayonnaise, lime juice, olive oil, chili powder, cumin, garlic powder, and optional cayenne pepper.
  2. In a large bowl, mix cooked pasta with black beans, corn, diced peppers, red onion, and cheddar cheese.
  3. Pour the dressing over the salad mixture and toss gently until evenly coated. Fold in diced avocado just before serving.
  4. Chill in the refrigerator for at least 30 minutes before serving to enhance flavor.
