  • 2 bell peppers (1 red, 1 yellow), sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey (or maple syrup)
  • Cooked rice for serving

  1. Prepare your ingredients by slicing the bell peppers and onion and mincing the garlic and ginger.
  2. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey (or maple syrup), and cornstarch.
  3. Heat vegetable oil in a skillet over medium-high heat. Cook ground turkey until browned, about 5-7 minutes. Drain excess grease.
  4. Add more oil to the skillet; sauté onions until softened (3-5 minutes). Add garlic and ginger; cook until fragrant (about 1 minute). Then add bell peppers and stir-fry until tender-crisp (5-7 minutes).
  5. Return turkey to skillet, pour in sauce, and stir well to coat everything evenly. Simmer for another minute or two until the sauce thickens slightly.
  6. Serve over warm cooked rice with optional garnishes like sesame seeds or chopped green onions.
