  • 1 lb lean ground beef
  • 1 yellow onion, diced
  • 1 taco seasoning packet
  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste
  • 1 avocado, sliced
  • 1 cup cottage cheese
  • 2 tbsp hot honey

  1. Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
  2. In a large skillet over medium-high heat, add the remaining tablespoon of olive oil and brown the ground beef for about 6-8 minutes. Drain any excess fat.
  3. Reduce heat to medium and stir in diced onion. Cook until softened (5-7 minutes). Add taco seasoning, paprika, garlic powder, cinnamon, salt, and pepper; cook for another minute.
  4. Drizzle hot honey over the beef mixture and simmer for 1-2 minutes to meld flavors.
  5. Assemble bowls by dividing roasted sweet potatoes among serving dishes, topping with the beef mixture, avocado slices, and a dollop of cottage cheese.
