  2. In another bowl, mix the egg, Greek yogurt, milk, melted butter, and vanilla until smooth.
  3. Fold the wet mixture into the dry ingredients gently until just combined; some lumps are okay.
  4. Heat a lightly oiled griddle over medium heat.
  5. Pour about 1/4 cup of batter for each pancake onto the griddle.
  6. Cook for 2-3 minutes until golden brown and bubbles form on top; flip and cook for an additional minute.
  7. Keep warm in a preheated oven if making multiple batches.
