  2. In another bowl, mix the Greek yogurt, egg, vanilla extract, and milk until smooth.
  3. Combine the wet ingredients with the dry ingredients gently; stir until just moistened—it's okay if there are a few lumps.
  4. Stir in melted butter until combined.
  5. Let the batter rest for about 5-10 minutes.
  6. Heat a lightly oiled griddle over medium heat.
  7. Pour 1/4 cup of batter onto the hot griddle; cook until bubbles form on the surface and edges look set (about 2-3 minutes).
  8. Flip carefully and cook until golden brown on both sides.
  9. Serve warm with your favorite toppings.
