  • 1 teaspoon vanilla extract
  • 1/2 cup milk (whole milk recommended)
  • 2 tablespoons unsalted butter, melted

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine Greek yogurt, egg, and vanilla extract; mix until smooth. Gradually add milk while whisking. Stir in melted butter.
  3. Pour wet ingredients into dry ingredients; mix gently until just combined—lumps are okay!
  4. Let the batter rest for 5-10 minutes.
  5. Preheat a greased griddle over medium heat and pour about 1/4 cup of batter for each pancake.
  6. Cook until golden brown on both sides (about 2-3 minutes per side).
  7. Serve warm with your choice of toppings.
