  • 1 cup mashed ripe bananas (about 3 medium)

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the gluten-free flour blend, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Mash ripe bananas in a separate bowl until mostly smooth.
  6. Gradually mix dry ingredients into the wet mixture until just combined.
  7. Fold in mashed bananas and optional nuts until evenly distributed.
  8. Pour batter into prepared loaf pan and spread evenly.
  9. Bake for 50-60 minutes or until a skewer comes out clean.
  10. Cool in the pan for about 10-15 minutes before transferring to a wire rack.
