  • ¾ cup milk
  • ¼ cup melted butter
  • 2 tbsp molasses
  • 2 tbsp brown sugar
  • ½ tsp vanilla essence

  1. In a large bowl, whisk together flour, baking powder, ginger, cinnamon, cloves, and salt.
  2. In another bowl, mix eggs, milk, molasses, brown sugar, melted butter, and vanilla until combined.
  3. Pour wet ingredients into dry ingredients and fold gently until just combined; let batter rest for 15-20 minutes.
  4. Preheat a griddle over medium-low heat and lightly grease with butter.
  5. Pour batter onto the griddle (¼ cup each) and cook for about 2-3 minutes per side until golden brown.
  6. Keep cooked pancakes warm in a low oven while finishing cooking remaining batter.
