  • 150g (3/4 cup) granulated sugar
  • 100g (1/2 cup) unsalted butter, softened
  • 2 large eggs
  • 240ml (1 cup) buttermilk
  • 400g (about 3 cups) fresh or frozen pitted cherries, halved

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, mix flour, brown sugar, and cinnamon for the streusel topping. Cut in cold butter until crumbly; refrigerate.
  3. In a large bowl, cream together granulated sugar and softened butter until fluffy. Add eggs one at a time, then stir in vanilla.
  4. Combine flour, baking powder, baking soda, and salt in another bowl. Gradually add to the creamed mixture alternating with buttermilk.
  5. Fold in halved cherries gently.
  6. Pour batter into the prepared pan; sprinkle streusel topping evenly over it.
  7. Bake for 35-40 minutes until golden brown; cool before serving.
