  • 8 Lamb Chops (about 1-inch thick)
  • 6 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • 1 tablespoon Fresh Rosemary (chopped)
  • 1 tablespoon Fresh Thyme (chopped)
  • 2 pounds Russet Potatoes (peeled and quartered)
  • 1/2 cup Heavy Cream
  • 1/4 cup Butter (unsalted)
  • 1/4 cup Milk

  1. In a medium bowl, whisk together minced garlic, olive oil, rosemary, thyme, Dijon mustard, salt, pepper, and lemon juice.
  2. Marinate lamb chops in the mixture for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Sear marinated lamb chops for 2-3 minutes on each side until browned.
  4. Optionally finish cooking in a preheated oven at 400°F until desired doneness is reached.
  5. While chops rest, boil quartered potatoes until fork-tender; drain and dry them on low heat.
  6. Mash potatoes and gradually incorporate warm heavy cream, butter, milk, salt, and white pepper until creamy.
