  • 1 tablespoon Fresh Thyme, chopped
  • 2 pounds Russet Potatoes, peeled and quartered
  • 1/2 cup Heavy Cream
  • 1/4 cup Butter, unsalted
  • Salt and Pepper to taste

  3. Marinate lamb chops in the mixture for at least 30 minutes in the refrigerator.
  4. Preheat oven to 400°F (optional).
  5. Sear marinated lamb chops in a skillet over medium-high heat for 2-3 minutes per side until browned.
  6. (Optional) Transfer skillet to the oven and bake for an additional 5-10 minutes until desired doneness is reached.
  7. Meanwhile, boil quartered potatoes in salted water until fork-tender (15-20 minutes). Drain.
  8. Return potatoes to pot over low heat for one minute to dry out excess moisture.
  9. Mash potatoes and gradually mix in warmed cream, butter, milk, salt, and pepper until creamy.
