  • 4 cloves garlic
  • 1/4 cup olive oil
  • 1 large onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 (15 oz) can diced tomatoes
  • 12 large flour tortillas
  • 1 cup shredded Monterey Jack cheese

  1. Marinate chicken cubes in olive oil, minced garlic, oregano, basil, paprika, cayenne pepper (if using), salt, and pepper for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium-high heat for 8-10 minutes until browned.
  3. Sauté sliced onions and bell peppers in the same skillet for about 5-7 minutes until softened.
  4. Add diced tomatoes and chicken broth; simmer for 10 minutes until slightly thickened.
  5. Combine cooked chicken with the sauce and stir in chopped parsley.
  6. Warm tortillas as per package instructions.
  7. Assemble wraps with the chicken mixture, cheese, and any desired toppings.
  8. Fold or roll tortillas tightly and serve warm.
