  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, and red pepper flakes.
  2. Marinate the chicken cubes in the mixture for at least 30 minutes.
  3. Heat olive oil in a large skillet over medium-high heat; cook marinated chicken in batches until browned.
  4. Sauté minced garlic and ginger in the same pan for about 30 seconds.
  5. Add broccoli florets, sliced carrots, and snow peas; stir-fry until tender-crisp.
  6. Return chicken to the pan; pour remaining marinade over everything and combine.
  7. Simmer until the sauce thickens slightly.
  8. Cook egg noodles according to package instructions; drain and set aside.
  9. Toss cooked noodles with chicken and vegetable mixture until well coated.
  10. Serve hot with optional garnishes like green onions and sesame seeds.
