  • Fresh parsley and lemon juice for garnish

  1. Pat the beef chops dry and season generously with salt and pepper. Let rest at room temperature for 15-30 minutes.
  2. In a bowl, melt 2 tablespoons of butter and mix in minced garlic, thyme, rosemary, and optional red pepper flakes.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Sear the beef chops for about 3-4 minutes on each side until golden brown.
  5. Check for doneness (145°F) using a meat thermometer; add remaining butter when it reaches around 135°F and baste the chops.
  6. Remove from heat, let rest for at least three minutes before serving.
  7. Garnish with lemon juice and chopped parsley.
