  • 1.5 pounds beef stew meat
  • 1 pound baby potatoes
  • 4 tablespoons unsalted butter
  • 3 cloves garlic
  • Beef broth

  1. Preheat oven to 400°F (200°C). Wash and halve baby potatoes. Toss with onion powder, dried rosemary, thyme, salt, and pepper.
  2. In a separate bowl, season beef stew meat with smoked paprika, onion powder, salt, and pepper.
  3. Spread seasoned potatoes on a baking sheet and roast until golden brown.
  4. Heat olive oil in a skillet over medium-high heat; sear beef until browned on all sides.
  5. Lower heat; melt butter in the same skillet and add minced garlic and herbs.
  6. Return beef to the skillet with beef broth; combine everything well before adding roasted potatoes.
