  • 1 lb boneless, skinless chicken breast
  • 1 cup long-grain white rice
  • 1 cup corn kernels (fresh or frozen)
  • Juice of 1 lime
  • ½ cup crumbled Cotija cheese
  • 1 tbsp mayonnaise
  • 1 large avocado (diced or sliced)
  • Fresh cilantro (chopped)
  • Sour cream
  • Chili powder, salt, and black pepper

  1. Dice the chicken breast and marinate in lime juice, chili powder, salt, and pepper for at least 30 minutes.
  2. Heat oil in a skillet over medium-high heat and cook the marinated chicken until golden brown (about 5-7 minutes per side).
  3. In another skillet, char the corn kernels for 7-10 minutes. Mix with mayonnaise, Cotija cheese, cilantro, lime juice, salt, and pepper.
  4. Rinse rice under cold water. Cook with two cups of water (or broth) in a saucepan until liquid is absorbed (15-18 minutes).
  5. Assemble bowls by layering rice, chicken, creamy street corn mixture, diced avocado, sour cream, and garnishes.
