  • Boneless, skinless chicken thighs (1.5 lbs)
  • Low sodium soy sauce (1/4 cup)
  • Sweet rice vinegar (1/4 cup)
  • Brown sugar (2 tablespoons)
  • Honey (1 tablespoon)
  • Grated fresh ginger (1 teaspoon)
  • Minced garlic (2 cloves)
  • Vegetable oil (1 tablespoon)

Instructions

  1. In a bowl, whisk together soy sauce, sweet rice vinegar, brown sugar, honey, and grated ginger until well combined.
  2. Add minced garlic and sesame oil to the mixture and stir until mixed thoroughly.
  3. In another small bowl, combine cornstarch with water; mix until dissolved.
  4. Add the cornstarch slurry to the sauce mixture and whisk to incorporate.
  5. Pat chicken pieces dry; heat vegetable oil in a skillet over medium-high heat.
  6. Sear chicken in batches for 3–4 minutes per side until golden brown and cooked through.
  7. Pour teriyaki sauce over cooked chicken; simmer for 3–5 minutes until thickened.
  8. Serve over cooked rice and garnish with sesame seeds and green onions if desired.
