  • 2 cups chicken broth
  • 2 tbsp butter
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ¼ cup all-purpose flour
  • ½ cup half-and-half
  • 2 cups frozen mixed vegetables
  • 3 cups warm mashed potatoes

  1. Melt butter in a large skillet over medium heat. Add diced onion and cook until softened (5–7 minutes).
  2. Stir in minced garlic, salt, pepper, and thyme; sauté for about a minute.
  3. Add chicken pieces and cook until lightly browned (5–7 minutes).
  4. Sprinkle flour over the mixture; stir for 1–2 minutes before whisking in chicken broth and half-and-half until smooth. Simmer until thickened.
  5. Mix in frozen vegetables; continue simmering for another 5–7 minutes.
  6. Preheat oven to 375°F (190°C). Transfer filling to a baking dish and spread mashed potatoes evenly on top.
  7. Bake for 25–30 minutes until bubbling and golden brown. Let rest for 10–15 minutes before serving.
