  • 2 lbs boneless, skinless chicken breasts
  • 4 tbsp olive oil
  • 1 tbsp paprika
  • 1 large red onion
  • 2 bell peppers
  • 1 lb baby potatoes
  • 1 lb broccoli florets
  • 1 cup cherry tomatoes
  • Spices: garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper (optional), salt, black pepper

  1. Preheat oven to 400°F (200°C) and line two large baking sheets with parchment paper.
  2. In a bowl, combine olive oil and spices; whisk until blended.
  3. Pat chicken dry and add to seasoning mix along with chopped vegetables. Toss until well coated.
  4. Spread chicken and veggies evenly on prepared pans in a single layer.
  5. Roast for 15 minutes; then flip chicken and toss veggies.
  6. Add cherry tomatoes and roast for an additional 15-20 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Rest for 5 minutes before serving.
