  • 2 lbs boneless, skinless chicken breasts
  • 4 tbsp olive oil
  • 1 tbsp paprika
  • Assorted vegetables: red onion, bell peppers, baby potatoes, broccoli florets, cherry tomatoes
  • Spices: garlic powder, onion powder, thyme, oregano, cayenne pepper (optional), salt, black pepper

  1. Preheat oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix olive oil with paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper (if using), salt, and black pepper.
  3. Pat chicken dry and add to the seasoning blend. Chop vegetables and combine them with the seasoned chicken in the bowl.
  4. Spread the mixture evenly on prepared baking sheets in a single layer.
  5. Roast for 15 minutes; flip chicken and toss veggies before adding halved cherry tomatoes.
  6. Return to oven for an additional 15-20 minutes until chicken reaches 165°F (74°C) internal temperature.
