Preheat oven to 180°C (350°F).
Pat chicken dry, season with salt and pepper.
Blanch broccoli in boiling salted water for 2-3 minutes; drain.
Sear chicken in olive oil/butter over medium-high heat until golden brown.
In the same skillet, mix cream cheese with chicken broth over low heat until smooth. Add garlic powder, onion powder, mustard (if using), thyme/herbs; season.
Combine seared chicken and blanched broccoli in a bowl; pour sauce over and mix well.
Transfer to a greased baking dish; top with grated mozzarella.
Bake for 25-30 minutes until bubbling and golden brown.
