  • 1 pound lo mein noodles (fresh or dried)
  • 1 tablespoon sesame oil (for noodles)
  • 1 tablespoon vegetable oil (for cooking)
  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup sliced mushrooms
  • 1 cup shredded carrots
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Sauce: soy sauce, hoisin sauce, brown sugar, sesame oil, ground ginger, white pepper, chicken broth

  1. Prepare the sauce by whisking together soy sauce, hoisin sauce if using, brown sugar, sesame oil, ground ginger, white pepper, and chicken broth in a bowl. Mix cornstarch with cold water until smooth in a separate small bowl.
  2. Cook the lo mein noodles according to package instructions until al dente. Drain and rinse with cold water; toss with sesame oil.
  3. Heat vegetable oil in a large wok over medium-high heat. Add sliced chicken and cook for about 5-7 minutes until browned; remove from wok.
  4. In the same wok, sauté bell peppers, mushrooms, and carrots for about 5-7 minutes until crisp-tender.
  5. Add garlic and ginger; sauté for another 30 seconds until fragrant.
  6. Return cooked chicken to the wok along with prepared noodles. Pour sauce over everything and toss well for another 2-3 minutes until thickened.
  7. Serve immediately garnished with sliced green onions.
