  1. In a bowl, whisk together soy sauce, hoisin sauce, sesame oil, brown sugar, ground ginger, and white pepper. Set aside.
  2. Cook lo mein noodles according to package instructions; drain and toss with sesame oil.
  3. Slice chicken and vegetables. Mince garlic and grate ginger.
  4. Heat vegetable oil in a wok over medium-high heat; cook chicken until browned and cooked through. Remove from wok.
  5. Sauté bell peppers, mushrooms, and carrots until tender-crisp. Add garlic and ginger; cook until fragrant.
  6. Return chicken to the wok along with cooked noodles; pour sauce over everything. Toss to combine and heat through.
  7. Garnish with sliced green onions before serving.
