  • 2 lbs beef chuck, cut into cubes
  • 1 lb ground beef
  • 2 large yellow onions, coarsely chopped
  • 4 cloves garlic, minced
  • 3 large carrots, sliced into pumpkin shapes
  • 6 cups beef broth
  • 1 (14.5 oz) can crushed tomatoes
  • 2 medium sweet potatoes, cubed
  • Herbs: bay leaves, thyme, and rosemary
  • Instructions:

  1. Pat beef chuck dry and season with salt and pepper. Dredge in flour.
  2. In a large pot, heat olive oil over medium-high heat and sear the beef until browned. Remove from pot.
  3. Sauté onions and garlic until translucent. Add carrots and celery; cook until softened.
  4. Pour in additional beef broth to deglaze the pot; return seared beef along with ground beef.
  5. Stir in crushed tomatoes and herbs. Bring to a simmer.
  6. Add sweet potatoes and let simmer for an hour.
  7. Adjust seasoning as needed before serving.
