  • 2 lbs beef chuck, cut into 1.5-inch cubes
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 2 large yellow onions, coarsely chopped
  • 4 cloves garlic, minced
  • 34 large carrots, sliced into pumpkin shapes
  • 6 cups beef broth
  • 1 (14.5 oz) can crushed tomatoes
  • 2 medium sweet potatoes, peeled and cubed
  • Fresh parsley for garnish
  • Preparation Instructions:

Instructions

  1. Pat the beef chuck dry and season with salt and pepper; dredge in flour.
  2. In a large Dutch oven, heat olive oil over medium-high heat; sear beef chuck until browned on all sides. Set aside.
  3. Lower heat to medium, add onions and sauté until translucent; add garlic, carrots, and celery; cook for an additional 5-7 minutes.
  4. Add extra broth and scrape up any bits from the bottom of the pot. Return beef to the pot along with crushed tomatoes.
  5. Stir in bay leaves and herbs; bring to boil then reduce heat to simmer covered for about an hour.
  6. Add sweet potatoes and other root vegetables; continue cooking until tender (another hour).
  7. Adjust seasoning if needed before serving with fresh parsley.
