  • 1 teaspoon baking powder
  • Ground cinnamon (for topping, optional)

  1. Prepare the apple cider reduction by boiling 2 cups of apple cider until it thickens to a syrupy consistency (about 30-45 minutes). Allow cooling.
  2. In a bowl, whisk together flour, apple pie spice, and baking powder; set aside.
  3. In a separate bowl, cream together softened butter, granulated sugar, and light brown sugar until fluffy.
  4. Beat in the egg and cooled apple cider reduction until well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined; do not overmix.
  6. Chill dough for at least 30 minutes.
  7. Preheat oven to 375°F (190°C). Scoop dough onto lined baking sheets and bake for 9-11 minutes or until edges are golden but centers remain soft.
  8. Cool on racks and dust with ground cinnamon before serving.
