  1. Prepare the apple cider reduction by simmering 2 cups of apple cider in a saucepan over medium heat until reduced to about 2-3 tablespoons. Let cool.
  2. In a bowl, whisk together flour, apple pie spice, and baking powder.
  3. In a large mixing bowl, cream the softened butter with both sugars until fluffy. Add the egg and mix in the cooled apple cider reduction.
  4. Gradually combine dry ingredients into wet ingredients until just mixed; avoid overmixing.
  5. Chill dough for at least 30 minutes before baking.
  6. Preheat oven to 375°F (190°C). Scoop chilled dough onto parchment-lined baking sheets and bake for 9-11 minutes until edges are golden.
  7. Cool on wire racks and dust with ground cinnamon if desired.
