  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • Spices: ground cumin, chili powder, smoked paprika, oregano, cayenne pepper
  • ½ cup chicken broth
  • 1 cup shredded Monterey Jack cheese
  • 2430 corn tortillas
  • Olive or avocado oil for brushing

Instructions

  1. Poach chicken in seasoned water or broth until cooked through (165°F). Reserve liquid.
  2. Sauté onion and garlic in oil until translucent. Add spices and cook briefly.
  3. Mix in shredded chicken and reserved liquid; simmer for 5 minutes.
  4. Stir in cheese; let cool slightly.
  5. Soften tortillas in the microwave; fill with chicken mixture and roll tightly.
  6. Arrange on a baking sheet; brush with oil.
  7. Bake at 400°F for 12-15 minutes; flip and bake another 10-15 minutes until golden brown.
