  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 green and red bell peppers, chopped
  • 28 oz can crushed tomatoes
  • 15 oz can tomato sauce
  • 1 cup beef broth
  • 2 lbs Yukon Gold potatoes, peeled and cubed

  1. Brown the ground beef in a skillet over medium-high heat; drain excess grease.
  2. Add onion, garlic, and bell peppers to the skillet; sauté for 5-7 minutes.
  3. Stir in crushed tomatoes, tomato sauce, beef broth, Worcestershire sauce, chili powder, oregano, basil, paprika, cayenne pepper (if using), salt, and pepper; simmer for about 15 minutes.
  4. Transfer the mixture to a slow cooker and gently fold in the cubed potatoes.
  5. Cook on low for 6-8 hours or high for 3-4 hours until potatoes are fork-tender.
  6. Stir gently before serving; adjust seasonings as needed.
