  • 1.5 lbs boneless, skinless chicken breasts (cubed)
  • 1 large onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 1 can crushed tomatoes (28 oz)
  • 1 can full-fat coconut milk (13.5 oz)
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ¼ cup unsalted butter
  • Spices: garam masala, curry powder, paprika, turmeric, cumin, coriander, cayenne pepper
  • Instructions:

  1. Sauté onions in melted butter until softened.
  2. Add garlic and ginger; cook until fragrant.
  3. Brown the cubed chicken in the skillet.
  4. Mix in tomato paste and spices; cook briefly.
  5. Stir in crushed tomatoes and chicken broth; simmer.
  6. Transfer to slow cooker and add coconut milk.
  7. Cook on low for 6-8 hours or high for 3-4 hours.
  8. Stir in cream and lemon juice before serving.
  9. Garnish with cilantro and serve over basmati rice with naan.
